  • 2 cups baby spinach or chopped bok choy
  • Sea salt and freshly ground black pepper, to taste
  • Optional garnish: extra green onions or a drizzle of sesame oil

Instructions

  1. Sauté the aromatics: In a large soup pot or Dutch oven, warm the toasted sesame oil over medium heat. Add the fresh ginger and minced garlic, stirring for about 1 minute until fragrant. This quick step builds the base of the soup’s savory depth—don’t skip it!
  2. Build the broth: Pour in the broth, soy sauce, and rice vinegar. Bring the liquid to a simmer. It’s here that the broth starts transforming into something rich and restorative, thanks to the ginger and garlic swirling through.
