Description

A delicious and creamy cheese log perfect for serving with crackers and fruits.


Ingredients

Scale
  • 8 oz cream cheese, softened
  • 2 oz goat cheese or mascarpone (optional)
  • 1/2 cup dried cranberries
  • 1/2 cup roasted pistachios, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon honey, plus more for drizzling

Instructions

  1. Let cream cheese (and optional goat cheese or mascarpone) come to room temperature.
  2. In a mixing bowl, beat the cheese until smooth and fluffy.
  3. Fold in half the chopped pistachios, dried cranberries, 1 tablespoon parsley, and honey.
  4. Shape the mixture into a log on plastic wrap. Wrap tightly and refrigerate for at least 1 hour.
  5. Unwrap and roll the log in the remaining pistachios, cranberries, and parsley.
  6. Drizzle lightly with honey before serving.
  7. Serve with crackers, baguette slices, or fresh apple and pear slices.

Notes

  • This cheese log can be made a day ahead of serving for better flavors.
