A delicious and creamy cheese log perfect for serving with crackers and fruits.

- 8 oz cream cheese, softened
- 2 oz goat cheese or mascarpone (optional)
- 1/2 cup dried cranberries
- 1/2 cup roasted pistachios, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon honey, plus more for drizzling
Instructions
- Let cream cheese (and optional goat cheese or mascarpone) come to room temperature.
- In a mixing bowl, beat the cheese until smooth and fluffy.
- Fold in half the chopped pistachios, dried cranberries, 1 tablespoon parsley, and honey.
- Shape the mixture into a log on plastic wrap. Wrap tightly and refrigerate for at least 1 hour.
- Unwrap and roll the log in the remaining pistachios, cranberries, and parsley.
- Drizzle lightly with honey before serving.
- Serve with crackers, baguette slices, or fresh apple and pear slices.
Notes
- This cheese log can be made a day ahead of serving for better flavors.
- Try adding other nuts or dried fruits for variation.
