Description

This Cheesy Yukon Gold Potato Casserole is a creamy and delicious side dish that is perfect for any occasion.


Ingredients

  • 6 medium Yukon Gold potatoes, peeled and diced
  • 1 cup chicken broth or vegetable broth
  • 1 cup sour cream
  • 1 cup dry stuffing mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup finely diced onion
  • 1/4 cup milk
  • 1/4 cup melted butter
  • Salt and black pepper (to taste)
  • Optional add-ins: fresh herbs, garlic powder, cooked veggies, or favorite seasonings

Instructions

  1. Place the peeled and diced potatoes in a pot of cold water. Bring to a boil and cook for 12–15 minutes until tender. Drain and allow to cool slightly.
  2. Transfer the potatoes to a large bowl. Add broth, sour cream, diced onion, milk, melted butter, salt, and pepper. Lightly mash to keep some rustic texture.
  3. Stir in the dry stuffing mix and half of the shredded cheese until combined.
  4. Preheat the oven to 350°F (175°C). Grease a casserole dish and spread the potato mixture evenly. Top with the remaining cheese.
  5. Bake for 30–35 minutes, or until golden and bubbly.
  6. Let the casserole rest for 5 minutes before serving.
