- 1/2 cup fresh basil pesto
- 2 tbsp extra virgin olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- Juice of 1 lemon
Instructions
- Place chicken breasts between plastic wrap and pound thinly to about 1/2 inch thick.
- In a bowl, mix olive oil, pesto, salt, pepper, and lemon juice. Coat chicken in the marinade and refrigerate for at least 30 minutes.
- Preheat grill to medium-high heat.
- Grill chicken for 4-5 minutes per side until crispy and golden brown (internal temperature should reach 165°F).
- Let the chicken rest for 5 minutes before slicing and serving.
