Delicious grilled chicken souvlaki bowls topped with fresh veggies and tzatziki sauce.

- 1 lb boneless, skinless chicken breasts
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp dried oregano
- 3 garlic cloves, minced
- 1 cup bell peppers (mixed colors), chopped
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 cup tzatziki sauce (store-bought or homemade)
Instructions
- Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper. Add cubed chicken breasts and coat thoroughly. Let marinate in the refrigerator for at least 30 minutes.
- Prepare Veggies & Skewers: While the chicken marinates, chop bell peppers and cucumbers into bite-sized pieces. Soak wooden skewers in water if using.
- Grill the Chicken: Preheat your grill over medium-high heat. Thread marinated chicken and bell pepper onto skewers. Grill for 10-12 minutes until cooked through and slightly charred.
- Make Tzatziki Sauce: In a small bowl, mix yogurt with grated cucumber (squeeze out excess moisture), minced garlic, chopped dill, lemon juice, and salt to taste.
- Assemble Bowls: Layer cooked rice or quinoa in serving bowls. Top with grilled souvlaki skewers alongside cucumber and cherry tomatoes. Drizzle generously with tzatziki sauce.

- For a vegetarian option, substitute chicken with marinated tofu.
