Description

A delicious and hearty coconut curry lentil dish that is perfect for a comforting meal.


Ingredients

Scale
  • 1 cup green lentils
  • 2 cups chopped cabbage (green or savoy)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • Salt to taste
  • 2 cups water or vegetable broth

Instructions

  1. In a large pot over medium heat, add a drizzle of oil. Sauté the diced onion until translucent, then stir in minced garlic and grated ginger until fragrant.
  2. Add chopped cabbage and a pinch of salt; cook for about 5 minutes until softened.
  3. Stir in curry powder and cumin to coat the vegetables evenly.
  4. Pour in rinsed lentils, coconut milk, and water (or broth). Bring to a boil, then reduce heat to simmer.
  5. Cover and let simmer for 30 minutes or until lentils are tender, stirring occasionally.
  6. Serve over cooked rice and garnish with fresh herbs if desired.

Notes

  • Feel free to adjust the spices to your preference.
  • Adding some spinach or kale can increase the nutritional value.
