A delicious and hearty coconut curry lentil dish that is perfect for a comforting meal.
Ingredients

- 1 cup green lentils
- 2 cups chopped cabbage (green or savoy)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 inch fresh ginger, grated
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp ground cumin
- Salt to taste
- 2 cups water or vegetable broth
Instructions
- In a large pot over medium heat, add a drizzle of oil. Sauté the diced onion until translucent, then stir in minced garlic and grated ginger until fragrant.
- Add chopped cabbage and a pinch of salt; cook for about 5 minutes until softened.
- Stir in curry powder and cumin to coat the vegetables evenly.
- Pour in rinsed lentils, coconut milk, and water (or broth). Bring to a boil, then reduce heat to simmer.
- Cover and let simmer for 30 minutes or until lentils are tender, stirring occasionally.
- Serve over cooked rice and garnish with fresh herbs if desired.
Notes
- Feel free to adjust the spices to your preference.
- Adding some spinach or kale can increase the nutritional value.
