- ½ cup unsalted butter, softened
- ½ cup creamy peanut butter
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 ¾ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- Mini peanut butter cups or chocolate hearts
- Pink candy hearts or Valentine sprinkles
Instructions
- Preheat and Prepare: Preheat oven to 350°F (175°C). Lightly grease a mini muffin pan.
- Cream Butter and Sugars: Beat butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Add Egg and Vanilla: Mix in egg and vanilla until smooth.
- Combine Dry Ingredients: Whisk flour, baking soda, and salt. Gradually mix into wet ingredients.
- Shape the Cookie Cups: Roll dough into 1-tablespoon balls. Place one in each muffin cavity.
- Bake: Bake for 10–12 minutes until lightly golden.
- Form the Cups: Press a chocolate cup or heart into the center while warm.
- Decorate: Add candy hearts or sprinkles immediately.
- Cool and Set: Cool 10 minutes in pan, then transfer to rack.
Notes
- For best results, allow the cookie cups to cool before removing from the pan.
- You can substitute with other types of candy if desired.
