Description

A hearty and delicious white bean soup made with fresh vegetables and herbs.


Ingredients

  • 2 cups white beans, soaked and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 carrot, diced
  • 2 stalks celery, diced
  • 1 teaspoon thyme
  • to taste Salt and pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrot, and celery. Sauté until softened.
  3. Add garlic and thyme. Cook for 1 minute.
  4. Add soaked white beans and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 30-40 minutes until beans are tender.
  6. Season with salt and pepper.
  7. Blend soup if desired for a creamy texture.
  8. Serve hot.
