A delicious one-pan BBQ chicken and rice recipe that’s easy to prepare.

- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice (uncooked)
- 2 cups chicken broth
- 1/2 cup BBQ sauce (your favorite variety)
- 1/4 cup honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- salt and pepper (to taste)
- 1 cup mixed vegetables (optional)
- green onions (chopped, for garnish)
Instructions
- Season the chicken thighs evenly with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a large skillet over medium heat and sear the chicken for 3–4 minutes per side until golden brown. Remove from the pan and set aside.
- In a bowl, whisk together BBQ sauce, honey, soy sauce, and minced garlic until smooth.
- In the same skillet, add the uncooked rice and toast for 1–2 minutes, stirring frequently.
- Pour in the chicken broth and half of the honey BBQ sauce. Stir to combine.
- Return the chicken to the pan, nestling it into the rice. Pour the remaining sauce over the chicken.
- Cover and simmer on low heat for 15 minutes.
- Add mixed vegetables if using, cover again, and cook for an additional 5 minutes until rice is tender and chicken is cooked through.
- Remove from heat and let rest for 5 minutes. Garnish with chopped green onions and serve hot.
