Ingredients

  • 1/4 cup honey
  • 2 teaspoons extra virgin olive oil
  • 1/2 teaspoon kosher salt (plus an additional pinch)
  • 1/2 teaspoon smoked paprika
  • 1/8 teaspoon cayenne pepper (optional)
  • 2 cups raw whole cashews (about 10 1/2 ounces)
  • 2 teaspoons finely chopped fresh rosemary leaves

Instructions

  1. Place a rack in the center of the oven and preheat to 350°F.
  2. In a medium bowl, whisk together honey, oil, paprika, salt, and cayenne.
  3. Fold in cashews until evenly coated, then add rosemary.
  4. Spread cashews on a baking sheet and bake for 13-18 minutes, tossing every 5 minutes.
  5. Remove from oven, sprinkle with salt and toss. Serve warm or at room temperature.
