Deliciously crispy roll-ups featuring corned beef and melted cheese, perfect for a snack or appetizer.
Ingredients

- 1 cup shredded mozzarella cheese
- 1 cup shredded Swiss cheese
- 8 slices corned beef
- 1/2 cup sauerkraut, drained
- 1 tablespoon butter or oil
- 1/4 cup Thousand Island dressing or spicy mayo (for dipping)
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Prepare all ingredients: thinly slice corned beef, drain sauerkraut, and shred cheeses if not pre-shredded.
- Heat a non-stick skillet over medium heat and add about 1/4 cup of shredded mozzarella and Swiss combined to form a round layer.
- Let the cheese melt and begin to bubble and crisp around the edges (about 2–3 minutes).
- Place a slice of corned beef and about 1 tablespoon of sauerkraut on one side of the cheese circle.
- Carefully use a spatula to roll the cheese over the filling and form a tight roll-up.
- Remove from pan and repeat with remaining ingredients.
- Serve warm with dipping sauce on the side.
- Garnish with fresh parsley, if using.

- This recipe is great for using up leftover corned beef.
