Description

Deliciously crispy roll-ups featuring corned beef and melted cheese, perfect for a snack or appetizer.


Ingredients

  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Swiss cheese
  • 8 slices corned beef
  • 1/2 cup sauerkraut, drained
  • 1 tablespoon butter or oil
  • 1/4 cup Thousand Island dressing or spicy mayo (for dipping)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Prepare all ingredients: thinly slice corned beef, drain sauerkraut, and shred cheeses if not pre-shredded.
  2. Heat a non-stick skillet over medium heat and add about 1/4 cup of shredded mozzarella and Swiss combined to form a round layer.
  3. Let the cheese melt and begin to bubble and crisp around the edges (about 2–3 minutes).
  4. Place a slice of corned beef and about 1 tablespoon of sauerkraut on one side of the cheese circle.
  5. Carefully use a spatula to roll the cheese over the filling and form a tight roll-up.
  6. Remove from pan and repeat with remaining ingredients.
  7. Serve warm with dipping sauce on the side.
  8. Garnish with fresh parsley, if using.
