Description

A delicious and moist cranberry orange bread perfect for breakfast or a snack.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon orange zest
  • ½ cup orange juice
  • ½ cup buttermilk
  • ½ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh or frozen cranberries

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in orange zest and vanilla.
  5. Gradually add dry ingredients, alternating with orange juice and buttermilk.
  6. Fold in cranberries gently.
  7. Pour batter into pan and bake for 55–65 minutes, until a toothpick comes out clean.
  8. Cool for 10 minutes in pan, then transfer to wire rack.
