Description

Deliciously fluffy red velvet pancakes topped with a creamy glaze.


Ingredients

  • 2 tablespoons granulated sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 2 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for glaze)
  • 2 to 3 tablespoons milk (for glaze)

Instructions

  1. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  2. In another bowl, whisk together buttermilk, egg, melted butter, vanilla, and red food coloring until fully combined.
  3. Pour the wet mixture into the dry ingredients and gently stir until just combined. Do not overmix; lumps are fine.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it. Pour 1/4 cup of batter per pancake.
  5. Cook each pancake until bubbles appear on the surface, then flip and cook until done.
  6. In a bowl, beat cream cheese, powdered sugar, vanilla, and milk until smooth and pourable.
  7. Stack the pancakes and drizzle generously with cream cheese glaze. Dust with powdered sugar if desired.
