- 2 tablespoons granulated sugar
- 1 tablespoon unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 2 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract (for glaze)
- 2 to 3 tablespoons milk (for glaze)
Instructions
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, egg, melted butter, vanilla, and red food coloring until fully combined.
- Pour the wet mixture into the dry ingredients and gently stir until just combined. Do not overmix; lumps are fine.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it. Pour 1/4 cup of batter per pancake.
- Cook each pancake until bubbles appear on the surface, then flip and cook until done.
- In a bowl, beat cream cheese, powdered sugar, vanilla, and milk until smooth and pourable.
- Stack the pancakes and drizzle generously with cream cheese glaze. Dust with powdered sugar if desired.

- For best results, use room temperature ingredients.
- Adjust the milk in the glaze for desired consistency.
