Delicious and cheesy beef burritos baked to perfection with a delightful green chile sauce.

- 1 lb ground beef
- 1 can (15 oz) refried beans
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup Monterey Jack cheese, shredded
- 2 cups green chile sauce
- 1 small onion, diced
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3 minutes.
- Add ground beef to the skillet. Cook until browned, breaking it up as it cooks. Drain excess fat. Stir in cumin, garlic powder, salt, and pepper.
- Stir in refried beans and half of the cheddar and Monterey Jack cheese until cheese is melted and mixture is combined.
- Spoon beef and bean mixture evenly into tortillas. Roll up each burrito and place seam-side down in the prepared baking dish.
- Pour green chile sauce over the burritos and sprinkle with remaining cheeses. Bake for 20 minutes, or until cheese is bubbly and burritos are heated through. Serve hot.
Notes
- These burritos can be made ahead and frozen before baking.
- Feel free to add your favorite toppings, such as sour cream or guacamole.
