Ingredients

  • 2 chicken breasts
  • 2 cups heavy cream
  • 2 cups chicken broth
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 oz penne pasta
  • 1 cup freshly grated Parmesan cheese
  • 4 oz cream cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Place chicken breasts in the slow cooker. Season with salt, pepper, garlic, and Italian seasoning. Pour in the chicken broth and heavy cream.
  2. Cover and cook on low for 4–5 hours or high for 2–3 hours, until chicken is cooked through and tender.
  3. Remove the chicken, shred it with two forks, and return it to the slow cooker.
  4. Stir in cream cheese and Parmesan cheese. Mix until melted and smooth.
  5. Add uncooked penne pasta. Stir well, cover, and cook on high for 25–35 minutes, stirring occasionally.
  6. Once pasta is tender, garnish with parsley and additional Parmesan. Serve warm and enjoy!
