Delicious homemade raspberry chocolate truffles that are rich and decadent.
Ingredients

- 8 oz high-quality dark chocolate (at least 60% cocoa)
- 1/2 cup heavy cream
- 1 cup fresh raspberries (approximately 12 berries)
- 2 tbsp unsweetened cocoa powder for coating
- 1 tbsp powdered sugar
Instructions
- Chop the dark chocolate and place it in a heatproof bowl.
- Heat the heavy cream until it simmers, then pour over the chocolate. Let sit for a few minutes, then stir until smooth.
- Gently fold in the fresh raspberries, being careful not to crush them.
- Cover and refrigerate the mixture for 1-2 hours until firm.
- Scoop portions of the ganache and roll into balls using your palms.
- Roll each truffle in cocoa powder or powdered sugar to coat.
- Serve immediately or store in an airtight container in the fridge.
Notes
- The truffles can be made a day in advance for convenience.
- Store in the refrigerator for up to one week.
