Description

Delicious homemade raspberry chocolate truffles that are rich and decadent.


Ingredients

Scale
  • 8 oz high-quality dark chocolate (at least 60% cocoa)
  • 1/2 cup heavy cream
  • 1 cup fresh raspberries (approximately 12 berries)
  • 2 tbsp unsweetened cocoa powder for coating
  • 1 tbsp powdered sugar

Instructions

  1. Chop the dark chocolate and place it in a heatproof bowl.
  2. Heat the heavy cream until it simmers, then pour over the chocolate. Let sit for a few minutes, then stir until smooth.
  3. Gently fold in the fresh raspberries, being careful not to crush them.
  4. Cover and refrigerate the mixture for 1-2 hours until firm.
  5. Scoop portions of the ganache and roll into balls using your palms.
  6. Roll each truffle in cocoa powder or powdered sugar to coat.
  7. Serve immediately or store in an airtight container in the fridge.
