- Combine the coconut base ingredients in a large mixing glass or measuring cup. Whisk together the coconut cream, sweetened condensed milk, and coconut extract until completely smooth—any lumps will create an uneven texture in the final drink.
- Fill two tall glasses with ice cubes, leaving about an inch of space at the top. The ice should come up roughly three-quarters of the way to ensure proper dilution and temperature.
- Divide the coconut mixture evenly between the two glasses, pouring it slowly over the ice. I like to use a spoon to gently stir the mixture into the ice—this helps it chill faster and prevents separation.
- Top each glass with soda water or lemon-lime soda, pouring slowly to maintain maximum carbonation. Fill until the glass is nearly full, leaving just enough room for stirring.
- Stir gently with a long spoon to combine the creamy base with the fizz. Be careful not to over-mix, as this can flatten the carbonation that gives dirty sodas their signature effervescence.
- Toast the coconut flakes in a dry skillet over medium heat for 2-3 minutes until golden brown, stirring frequently to prevent burning. This step adds incredible depth to the garnish.
- Garnish each glass with a generous sprinkle of the toasted coconut flakes and serve immediately with straws. The contrast between the creamy drink and crunchy topping creates the perfect textural experience.
