A deliciously crispy and flavorful dish featuring hard-boiled eggs, perfect for serving on toast or in a sandwich.

- 6 hard-boiled eggs
- 1 tbsp olive oil or butter (for crisping)
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard
- 2 tbsp finely chopped red or green onion
- 2 tbsp finely chopped celery (optional)
- 1 tbsp fresh herbs (like dill, chives, or parsley)
- Salt, to taste
- Black pepper, to taste
- Optional: paprika or chili flakes, to taste
Instructions
- Slice the hard-boiled eggs into quarters or thick chunks.
- Heat a skillet over medium-high heat and add olive oil or butter.
- Place eggs cut-side down in the skillet and sear for 2–3 minutes until golden and crispy on the edges. Let cool slightly.
- In a mixing bowl, combine mayonnaise, Dijon mustard, onion, celery (if using), herbs, salt, and pepper.
- Gently fold in the crispy eggs, breaking them up slightly while maintaining texture.
- Chill for a few minutes before serving, or enjoy immediately on toast, in a sandwich, or by itself.
Notes
- This recipe can be adjusted to taste by adding more or less of the herbs and spices.
- Best served fresh but can be stored in the refrigerator for a couple of days.
