- 2 pounds ground beef
- 1 box stuffing mix
- 2 large eggs
- 1 cup milk
- 1 small onion, finely chopped
- 1/2 cup ketchup
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped parsley
- 1/4 cup ketchup for topping
Instructions
- Preheat the oven to 350°F and lightly grease a loaf pan or line a baking sheet.
- In a large bowl, combine the stuffing mix and milk and let it sit for 2 minutes to soften.
- Add the ground beef, eggs, chopped onion, ketchup, garlic powder, salt, black pepper, and parsley.
- Mix everything gently until just combined, being careful not to overmix.
- Shape the mixture into a loaf and place it into the prepared loaf pan or onto the baking sheet.
- Spread the remaining ketchup evenly over the top.
- Bake for 50 to 60 minutes, or until the meatloaf is fully cooked and the center reaches 160°F.
- Let the meatloaf rest for 10 minutes before slicing and serving.

- For extra flavor, consider adding Worcestershire sauce or mustard to the mixture.
