Description

A delicious spinach and cheese quiche that’s perfect for brunch or a light dinner.


Ingredients

  • 2 cups cottage cheese
  • 2 cups fresh spinach
  • 4 eggs
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp nutmeg
  • 1 tsp dill or thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat a splash of olive oil over medium heat. Add chopped onions and minced garlic, sautéing until they are soft and fragrant, about 3-4 minutes.
  3. Add the fresh spinach, cooking until wilted. If using frozen spinach, ensure it’s heated through.
  4. In a large bowl, combine the cottage cheese, eggs, shredded cheese, sautéed vegetables, and seasonings. Stir until everything is well incorporated.
  5. Lightly grease a pie dish or quiche pan with cooking spray or olive oil to prevent sticking.
  6. Transfer the filling mixture into the prepared baking dish, spreading it evenly.
  7. Place the quiche in the preheated oven and bake for 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  8. Once baked, let the quiche cool for about 10 minutes before slicing.
