A delicious spinach and cheese quiche that’s perfect for brunch or a light dinner.

- 2 cups cottage cheese
- 2 cups fresh spinach
- 4 eggs
- 1 cup shredded cheddar or mozzarella cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp nutmeg
- 1 tsp dill or thyme (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat a splash of olive oil over medium heat. Add chopped onions and minced garlic, sautéing until they are soft and fragrant, about 3-4 minutes.
- Add the fresh spinach, cooking until wilted. If using frozen spinach, ensure it’s heated through.
- In a large bowl, combine the cottage cheese, eggs, shredded cheese, sautéed vegetables, and seasonings. Stir until everything is well incorporated.
- Lightly grease a pie dish or quiche pan with cooking spray or olive oil to prevent sticking.
- Transfer the filling mixture into the prepared baking dish, spreading it evenly.
- Place the quiche in the preheated oven and bake for 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Once baked, let the quiche cool for about 10 minutes before slicing.

- For a slightly different flavor, try adding other herbs like basil or oregano.
