Ingredients

  • 1 pound lean ground turkey
  • 8 ounces penne or fusilli pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 14 ounces crushed tomatoes (1 can)
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, heat olive oil. Sauté onions and garlic until fragrant, about 2 minutes.
  3. Add diced bell pepper and zucchini; cook until softened.
  4. Stir in ground turkey; cook until browned, breaking it apart as it cooks for about 5-7 minutes.
  5. Add crushed tomatoes and Italian seasoning. Simmer for 5 minutes.
  6. Combine cooked pasta with the turkey mixture; stir well to coat.
  7. Serve hot with optional grated cheese on top.
