Delicious beef and cheese rolls made with a smooth almond flour dough.

- 1 lb lean ground beef
- 1 cup sliced bell peppers
- 1 medium onion, sliced
- 1 cup shredded provolone or mozzarella cheese
- 1 cup almond flour
- 4 oz cream cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Garlic powder to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, combine almond flour and cream cheese to form a smooth dough; knead briefly.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add bell peppers and ground beef; cook until browned.
- Season the mixture with garlic powder, salt, and pepper. Stir in shredded cheese until melted.
- Roll out the dough on parchment paper into a rectangle, cut into squares, fill each with the meat mixture, and fold to create rolls.
- Bake on a parchment-lined baking sheet for 20 minutes or until golden brown.
Notes
- Make sure the dough is not too sticky while rolling out.
- Feel free to add additional spices to the beef mixture for extra flavor.
