Description

A delicious creamy pasta dish with sun-dried tomatoes and chicken.


Ingredients

Scale
  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1/2 teaspoon red pepper flakes
  • 8 ounces penne pasta
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Season chicken breasts with salt and pepper. Sear in olive oil over medium heat until golden and cooked through. Remove and slice.
  2. In the same skillet, sauté garlic until fragrant. Add sun-dried tomatoes and red pepper flakes.
  3. Stir in chicken broth and heavy cream. Let simmer for 3–4 minutes.
  4. Add Parmesan cheese and stir until sauce is creamy and smooth.
  5. Meanwhile, cook penne pasta in salted boiling water until al dente. Drain and set aside.
  6. Add sliced chicken and cooked pasta to the sauce. Toss to combine and simmer 2–3 more minutes.
  7. Serve hot with extra Parmesan and fresh herbs if desired.

Notes

  • For a spicier dish, increase the amount of red pepper flakes.
  • You can use half and half instead of heavy cream for a lighter version.
  • Fresh basil can be used for garnish.
