Description
A delicious creamy pasta dish with sun-dried tomatoes and chicken.
Ingredients

- 2 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1/2 teaspoon red pepper flakes
- 8 ounces penne pasta
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Season chicken breasts with salt and pepper. Sear in olive oil over medium heat until golden and cooked through. Remove and slice.
- In the same skillet, sauté garlic until fragrant. Add sun-dried tomatoes and red pepper flakes.
- Stir in chicken broth and heavy cream. Let simmer for 3–4 minutes.
- Add Parmesan cheese and stir until sauce is creamy and smooth.
- Meanwhile, cook penne pasta in salted boiling water until al dente. Drain and set aside.
- Add sliced chicken and cooked pasta to the sauce. Toss to combine and simmer 2–3 more minutes.
- Serve hot with extra Parmesan and fresh herbs if desired.
Notes
- For a spicier dish, increase the amount of red pepper flakes.
- You can use half and half instead of heavy cream for a lighter version.
- Fresh basil can be used for garnish.
