  • 1 tsp Vanilla Extract (Use pure vanilla for best flavor.)
  • 1/2 cup Berry Jam (Choose your favorite jam.)
  • 2 cups Fresh Berries (Mix and match varieties like blueberries, raspberries, and strawberries.)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry sheets on a lightly floured surface. Cut out circles using a cake pan as a guide and prick them with a fork.
  3. Arrange the circles on a baking tray, cover with parchment paper, and weigh down with another tray. Bake for 15–18 minutes until golden and crisp. Allow to cool on a wire rack.
  4. Whip the heavy cream in a chilled bowl until soft peaks form. In another bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the whipped cream.
  5. Layer one puff pastry round on a serving plate and spread half of the cream filling on top. Add a layer of berry jam and fresh berries.
  6. Top with the second pastry round, pipe any remaining cream filling around the edges, and finish with fresh berries and powdered sugar.
