Broiled Parmesan Potatoes

Description

Delicious broiled parmesan potatoes that are crispy on the outside and fluffy on the inside.


Ingredients

Scale
  • 2 medium-sized russet potatoes (scrubbed then dried)
  • 1/4 cup melted butter (or more — the more butter, the better!)
  • to taste homemade seasoned salt
  • 1/4 cup grated parmesan cheese (or more)

Instructions

  1. Place oven rack in the center of the oven then preheat broiler to high.
  2. Line a baking sheet with nonstick sprayed foil then set aside.
  3. Pierce potatoes lightly all over with a fork then microwave for 6-8 minutes, flipping every 1-2 minutes, or until a skewer inserted into the center goes in easily.
  4. Once cool enough to handle, slice potatoes in half then score halves into each half, being careful not to cut all the way through the skin.
  5. Transfer potato halves to prepared baking sheet.
  6. Brush each potato half with melted butter then season with seasoned salt and parmesan cheese.
  7. Broil for 10-15 minutes, or until golden brown, then serve.

Notes

  • For extra flavor, consider adding garlic powder or herbs to the melted butter.
  • Adjust the amount of parmesan cheese and seasoned salt to your preference.
