Description

A quick and flavorful chicken noodle stir-fry that’s perfect for a weeknight dinner.

Ingredients

Scale
  • 1 lb Chicken, boneless and skinless thighs or breasts
  • 1 tablespoon Cornstarch
  • 8 oz Noodles (Ramen or lo mein preferred)
  • 4 cloves Garlic, minced
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Hoisin Sauce
  • 2 tablespoons Honey
  • 1 teaspoon Sesame Oil
  • 1/2 teaspoon Chili Flakes or Sriracha
  • 2 stalks Green Onions, chopped
  • 1 tablespoon Sesame Seeds

Instructions

  1. Prep the Chicken: Cut the chicken into bite-sized pieces and toss them with cornstarch, salt, and pepper.
  2. Sear the Chicken: Heat a tablespoon of oil in a large pan over medium-high heat. Add chicken and sear until golden brown, about 5-6 minutes.
  3. Sauté the Garlic: Reduce heat to medium, add minced garlic and sesame oil, and sauté for about 30 seconds.
  4. Make the Sauce: Pour in soy sauce, hoisin sauce, honey, and chili flakes or Sriracha. Simmer for 2-3 minutes.
  5. Cook the Noodles: Boil noodles per package instructions, then drain and rinse.
  6. Combine Ingredients: Return the chicken to the pan, add drained noodles, and toss until coated.
  7. Heat Through: Cook for an additional 2 minutes until heated through.
  8. Serve and Garnish: Top with chopped green onions and sesame seeds.

Notes

  • Use thighs for juiciness or breasts for a leaner option.
  • Coat chicken with cornstarch for a light crust.
  • Substitute honey with brown sugar if desired.
  • Chili flakes or Sriracha is optional for heat.
  • Ramen or lo mein noodles are preferred. Soba or rice noodles can be used for a healthier alternative.
